You may be asking, “what the HECK is this fry sauce?” This is a good question, because I never heard of it before, either. I looked up the Wikipedia article that Drew mentioned in the contest post, and learned that it’s a regional thing, supposedly invented in Utah and common in that part of the US. But here on the East Coast, nope, never seen nor heard of it.
So, anyone can easily make fry sauce by combining two partys mayo to one part ketchup. But how about kicking it up several notches and coming up with something special? That is the idea of this contest. You take the basic recipe, and think of a way to make it your own by adding other ingredients.
As I think I’ve mentioned in other posts, the idea for my fry sauce recipe came from a yummie flavored mayonnaise that I was served at a restuarant called Robert’s Maine Grill. It was made to be served with some other dish, not the fried calamari that we’d ordered. The calamari there is served with marinara sauce for dipping. But the bartender said he liked dipping the calamari on this particular mayo, and he offered me a small cup of it to try. He was right, it was yummie!
So I figured that this might translate well to a fry sauce. I first worked on recreating the flavored mayo recipe. NO, I did not call the restaurant and ask them for their recipe, I just did it from memory of the flavor, adding a little of this, a little of that, writing down how much I was putting in, until I was satisfied with the results.
Then the ketchup portion came into play. I found that the ketchup kind of drowned out the flavors of the mayo, so I had to increase the amounts to make it just right. Remember, when you are developing a recipe, always add stuff just a little at a time until it tastes right to you. You can always add more of something, but if you add too much and it doesn’t taste good, you can’t take it out. You have to toss the whole batch and start over. Since I don’t like to waste food, I am very careful, and I got it just as I wanted it without having to toss anything.
We had it last night, and it was very tasty. Mike doesn’t like ANYTHING on his fries, not even plain ketchup, but he did try it. He says he’d like it on a burger, so I will have to make some burgers soon so we can use up the batch that I made.
