I’m sorry I’ve not posted anything here in a while. But Mike has been sick and in the hospital, and it’s been nothing short of hell on earth. The whole sordid saga is over on my Ailurophile blog.
Anyhoo, Mike’s not been eating much lately…he certainly will not be needing appetite suppressant pills for weight loss. But a very good thing that he likes is hot chicken broth. At the hospital they were giving him broth made with bouillon cubes, which we all know are mostly salt. The thing that makes this even dumber is that he is supposed to be limiting his sodium intake. Yet they serve him this salt-fest anyway. Go figure.
At home, I like to keep some Swanson low sodium broth. It’s great to cook with, for those times when you can’t make your own stocks. You can still get in in cans, but I prefer the resealable boxes…with those, you can just use what you need and stash the rest in the fridge.
Most people use these broths in recipes, such as for soups and sauces. But when Mike’s not eating much and just wants a hot mug of broth, this fills the bill perfectly. Even though it’s low-sodium, it’s still very tasty all by itself. When you use good ingredients, you don’t need to throw in tons of salt.
For cooking, this is what you should use if you do not make your own broth or stock. You may have noticed that most recipes that call for canned/boxed broths call for the low-sodium variety. This is because the non-low-sodium variety contains WAY too much salt. Remember, you can always add more salt if necessary to your recipe…but once you have too much in there, you can never get it out.
Whether you need to cut back on salt for health reasons, or if you just want something good to cook with, you really can’t go wrong with Swanson’s!
