I was watching Martha Stewart’s show today, and she had this baker dude on named Jim Lahey. He demonstrated a method of making bread which requires no kneading. It takes a long time to make, but very little *hands-on* effort. You just mix everything together in a bowl, let it rise for 12-18 hours. Then you form it into a ball, wrap in a kitchen towel, and let rise again for another hour or two. Then it gets baked in a Dutch oven (preferable cast-iron).

I usually make bread using a bread machine. It saves money, and making your own bread lets you control what goes into it…really good for those on a weight loss plan.
But when I saw the segment on the show, I thought the idea was so cool, that I had to order the book – My Bread: The Revolutionary No-Work, No-Knead Method. I’m looking forward to getting it, and trying he recipes therein.
